I had to stop my kids from eating these or we’d have none for leftovers tomorrow. Brielle had 4, Ryan had 3, Reid and I both had 1… I’m not sure how many Glenn had. There’s STILL a lot for leftovers. That makes this a complete WIN in my book! Mama is NOT cooking tomorrow!
4 Boneless, Skinless Chicken Breasts
Homemade Taco Seasoning (or… if you’d rather use store bought packets, go for it!)
1 can or 2 cups of corn (either canned, frozen or fresh if you’re feeling froggy and up to shucking!)
1 can of black beans, rinsed
32 oz (or 2 jars) of your favorite salsa (If I haven’t made my own, I go with Newman’s Own Medium)
Your Favorite Tortillas or Taco Shells
Cooking Time: 6 hours in crock-pot
Feeds: Family of 4-5 for TWO DAYS
1. Fix it and Forget It!
Clean, Cut off excess fat (if necessary) from chicken. Place in crock-pot. Throw in your taco seasoning. Place cover, set to low. Proceed with life while the crock-pot does its thing!
2. Fiesta Time!
Around hour 4, pour out any liquids from the cooked chicken. If you make your own Chicken Stock or Cream of Chicken Soup, SAVE THE LIQUID. Shred the chicken with 2 forks, add black beans, corn and salsa. Stir it all up, and put it back in the crock-pot for about an hour or 2 (low setting) to let the chicken soak up all the salsa flavor.
3. Plating Presentation:
This is a great family style meal and easy for everyone to serve themselves! Place the Shredded Chicken in a serving bowl. Shells or Tortilla all in one plate. Have some avocado. sour cream and limes for garnish!
