Quinoa Succotash Pantry Dive
This is a great weeknight recipe when you have taken out ground beef to thaw, but no idea what to do with it! The kids gobbled it up, it's a one pan meal and dinner was on the table in 20 minutes! You really can beat it!

Instructions
  1. Brown ground beef in 6 qt or large pan, drain
  2. In same pan, add remaining ingredients and bring to boil.
  3. Cook to the instructions of quinoa blend (note the blend will call for 1 ¾ cups of liquid, but because of the extra volume- you’ll want the full 2 cups.)
  4. Add ground beef back into pan with other ingredients.
  5. Stir & Serve
